Okonomiyaki Inspired Pancakes
- 1 cup shredded cabbage
- 1 diced carrot
- 80 ml water
- 2 eggs
- 1-2 tbsp low sodium soy sauce
- ½ cup Protein Pancake Premix
Add all ingredients besides pancake mix to a bowl and mix. Then add the pancake mix.
Batter should be thick – similar to our usual pancake consistency.
Grease and heat a non stick pan to medium high heat.
Once hot, spoon in batter and flatten with the spoon/spatula
Lower heat to a medium-low and flip when golden.
Repeat with remaining batter.
Top with Sriacha, sesame seeds, chives or spring onion and may if you wish.
