Cheese & Zucchini Pancakes

Equipment

  • Blender
  • Frying Pan

Ingredients

  • 50 grams Pancake Premix
  • 1 egg (can sub 2 egg whites)
  • 50 ml milk
  • 2 tbsp chickpeas
  • 150 grams grated zucchini
  • 30 grams grated cheese

Instructions

  • Blend egg, milk and chickpeas.
  • Add pancake premix.
  • Stir zucchini into mixture.
  • Cook for 4-5 mins a side on low-medium heat.
  • Serve with cheese, plain yoghurt and macadamia nut butter.
