Big Banana Pancakes

Ingredients

Pancake batter

  • 60 grams Pancake Premix
  • 1 egg
  • ½ mashed banana
  • ¼ cup reduced fat cream cheese (or yoghurt)

Yoghurt drizzle

  • 1 tbsp yoghurt (or reduced fat cream cheese)
  • 1 tbsp xylitol

Instructions

  • Mix together all pancake batter ingredients in a bowl.
  • Pour batter into a medium heat greased pan (enough to create a thin layer over the base of the pan).
  • Flip when bubbles appear.
  • Top with yoghurt drizzle, more banana and any extra crunchy bits or nut butter.
